100g coconut flour
60g ground almonds
Pinch xantham gum
1/4 tsp salt
2 tsp cinnamon
30g coconut sugar
150g sugar free apple sauce
100g honey
60g plain dairy free yoghurt
2 eggs
Handful chopped almonds to sprinkle on top (optional)
Preheat oven to 180 degrees centigrade fan
Use silicone muffin mould or grease muffin tin
Combine all dry ingredients
Add apple sauce, honey, yoghurt and eggs to mixture
Mix until all ingredients are combined
Sprinkle nuts on top if using
Bake for 15 minutes
Cool in tin for 5 minutes before turning out onto cooling rack
