Makes 12-15 cookies

100g organic butter softened
1 free range egg lightly beaten
250g plain flour
2 scoops USN diet whey isolean cookies and cream flavour
2 tbsp stevia
1 tsp vanilla extract

To decorate:
Coloured sugar free boiled sweets
Writing icing (optional)

Preheat oven to 190 degrees C
Line a baking tray with greaseproof paper
Cream butter and stevia together until light and fluffy
Beat in egg and vanilla extract until well combined
Stir in flour and diet whey until a dough is formed
Roll dough out on a floured surface
Using shaped cutters, cut cookies out of dough
Use a small plunger and plunge holes into the cookies where you require stained glass effect
Make a hole in the top of the cookie using a straw ready for ribbon to be threaded through
Bake cookies for 5 minutes and remove from oven
Crush up boiled sweets to fill holes in cookies
Return to oven for another 5 minutes until cookies are slightly browned around edges and sweets have melted in to fill the holes
Leave cookies to cool and Harden for 10 minutes on a wire rack before decorating with writing icing
